ABOUT ASHLEY
My name is Ashley. I'm 29 years old and pride myself on being a completely self-made athlete. Back in the summer of 2002, I got my butt out the door one day and ran down the street. The rest is history. Sort of. It was so incredibly awful and difficult, I thought I'd never, ever stick with it.
Nine years later, I'm happy to report I've completed races from short and swift 5Ks to the marathon distance.

ABOUT STEPHEN
Stephen (he's 28), on the other hand, has been running since before he could speak. After an impressive high school career as a cross-country and track star, he took time off in college to focus on his studies. He also enjoyed a two-year stint as a barista at a vegetarian/vegan cafe. Not just any cafe, though, my FAVORITE -- which just happens to be where we first met.
That’s right. When we first got together, Stephen would cut me heart-shaped tofu-kan to go with my meals. That’s when I knew it was love.

THE CATS
Really. We’re not those crazy cat bloggers. We didn’t even consider ourselves “cat people,” per se, until we started the blog. From time to time, we’d sneak in a few photos of our feline friends . . . and soon found that readers enjoyed their antics.
So, meet Scully (she’s the full-bodied, dark-haired cat on the left) and Rivey (he's the svelte, light-eyed kitty on the right).

HOW WE EAT
With all our vegan recipes, it can be confusing sometimes. Here's the deal: Ashley's a vegetarian. She eats eggs and cheese. She shies away from milk, yogurt, and butter (instead, I drink soy or almond milk and other alternatives). Strange, we know. Ashley likes to eat a work-week vegan diet when she can. Mostly because she enjoys the variety of fruits and veggies it promotes (she could pizza all day, every day for the rest of her life and probably be content).
Stephen, on the other hand, is still getting used to calling himself a pescatarian. He eats fish of all shapes and sizes. He isn't as squeamish about dairy as Ashley is. But, much like Ashley, he also enjoys vegan foods and eating tons of fresh fruits and vegetables. He's the true healthy eater in the house -- and more often than not is found noshing on wheat berries, crispy kale, and chickpeas.

No matter what, we tend to avoid labeling our diets. We eat what makes me feel good. And we often like to eat vegan and whole foods because they make us feel good. If you're interested, here's how we went Un-Vegan.
