
Good morning! Today is the first day of my full work week off. Jealous? Don't be. It's time off long overdue . . . and with only a few concrete plans, I intend to make the most of it (RELAX). Hope everyone had a great holiday! We certainly did. However, if you're anything like me, you're likely waking up these days in a post-cookie-madness sugar haze (it feels like a hangover to me, though I've had only little to drink if anything). I've decided to do something about that.
Yup -- a detox.
Not really a hard-core one. It's more detox-ish than full on . . . anything is better than subsisting on a diet of cookies alone. I am somewhat following Gwyneth Paltrow's, but with a bit more food . . . need to fuel the running. So today's share is actually something way healthy. I've decided to re-create my favorite chocolate chipper -- chocolate chip-coconut cookies -- into a raw cookie. Now, those of you out there who eat a raw diet (or dabble more than I have) might have some suggestions to make this recipe healthier, more raw -- I imagine the carob chips aren't raw technically, etc.
Please, please, please share your thoughts. I'm new to this whole genre, but most eager to learn.

Coconut & Carob "Cookies" (more like energy chunks)
What you'll need . . .
- 1-3/4 cups raw walnuts
- 3/4 cup steel cut oats
- 1/4 cup agave syrup
- 1/4 cup almond butter
- 2 teaspoons pure vanilla extract
- 1/2 package vegan carob chips (I used Sunspire)
- 1/2 cup unsweetened coconut flakes

Method . . .
- In a food processor, blend together the oats and walnuts until well incorporated.
- In a large bowl, mix together all ingredients. I first combined the walnut-oat mixture with the agave, almond butter, and vanilla extract. Then I added everything else. Just keep mixing until everything is covered.
- Line a cookie sheet (or plate) with plastic wrap or wax paper. Drop heaping tablespoons onto the sheet (I found it helpful to really PUSH the ingredients into the tablespoon and then press down on them once on the sheet to flatten slightly).
- Refrigerate for a few hours to harden. Or just eat like dough.
They're REALLY good. Remind us of these energy chunks we used to buy at our beloved natural foods store in Ithaca. Anyway, stay tuned for more fantastic, detox-friendly recipes all this week as we gear up for the new year. We're also working on our resolutions. One of mine is to spend less time on the couch. But as I type this -- Stephen's on the couch playing our new favorite game: New Super Mario Bros. Wii. Best game ever. And I plan to join him . . . NOW.

Good for you going for the detox! I'm sure you'll feel great. But, what I really wanted to say is that Chris and I also spent wayyyy too many hours on the couch playing our new Super Mario Wii game. So addicting. It's almost worse than sugar!
Hahaha :) YES! Super Mario has always been my favorite game. But this one def. brings it to the next level. I love the penguin suit!
I think this is a fantastic idea! However- having a Ukrainian fiance- I have one more Christmas feast to endure. Then I plan on detoxing myself! I'll be jotting down these recipies for the future, though!

I love these kinds of cookies, just made a batch last night, with dried cherries, flax and coconut oil.
They satisfy me a hell of a lot more than a real chocolate chip cookie!

Fantastic recipe (coming from someone who doesn't like chocolate, that's big!) I also added coconut oil and flax in mine for an added health punch. I rolled mine out into 1/2" thick and cut bars for my hub's lunch. Flying all day he needs quick energy that he can grab on the go and these are PERFECT! Thanks so much for the recipe and excellent pics that lure me into trying them in the first place. (yes, I admit it. I only try recipes that the pic looks tasty.)
I just made my second batch of these and they're AMAZING! i used dates and prunes for the fruit part and they work really well!
I'm a little late to the game finding these "cookies", but I just made them and they are FANTASTIC! Also, I did 1/2 almonds and 1/2 walnuts, used rolled oats instead of steel cut, and swapped peanut butter for almond, Oh, I also did 1/2 vegan chocolate chips and 1/2 dried cherries. I'm never buying an energy bar again, I plan on always having these on hand. Thanks for the recipe.

i love these, i just had one problem -- i followed the recipe, pressed them into a cookie dough scooper to give them shape, but the mixture never really came together. the cookies firmed up a little after i put them in the freezer, but even then, after a few seconds in my hand, they start to fall apart. did i miss something, or is this the way it is?
Hmm. DebZ -- they shouldn't be falling apart. I'd add more agave or peanut butter (in 1-tablespoon amounts) until it sticks together a bit more. I think sometimes it depends on the moisture in the air. Which sounds weird, but I've heard can have an impact on baking/etc. Good luck!
This is a little late but I just came across your recipe and it looked so good I just had to try it for myself. When I was at the health food store buying the carob chips (our grocery store only had the powder) they said that they are indeed raw. I rattled off the list of ingredients (as best I could remember off the top of my head) and they thought that the only thing questionable would be the almond butter, depending on what kind you would have bought.
Allecia -- thanks for checking on it for us. I do think the kind we used was raw -- though, now I can't exactly remember which one we tried. We bought it at a natural foods store in bulk, so it wasn't pre-jarred or whatever. I really appreciate knowing that we were on the right track! <3
