A Simple Sandwich


What I am about to share with you is my all-time favorite sandwich. In fact, in our house, it is most affectionately referred to as The Ashley Sandwich -- I eat it (at least) once a week, usually on Friday night . . . and then again on Sunday.

Exciting stuff, right? Well, for me, it certainly is. I wish I could dig my teeth into this baby right now. Phew! I'm working up a sweat here!


It's easy enough to assemble. Just get some wheat rolls (or ciabatta bread), a ball of fresh mozzarella, a vine-ripened tomato, some fresh basil, olive oil, and salt.



Pile the mozzarella high.
Lay the slices of tomato on top . . .
and then the basil.
Drizzle the olive oil on the top slice . . .
and sprinkle with salt.

Tomato, basil and mozzarella is one of my all-time favorite combos. Oh, and add bread to that, and I'm good. Great photos. Thanks for adding me to your blogspiration. I look forward to checking out your posts, too!

I have to agree, there is nothing better than this combo. I added chicken and made a similar sandwich. Very yummy!

Where on earth do you find vine-ripened tomatoes this time of year? I bought oodles and oodles of tomatoes at a farm stand over the summer, sliced and roasted them briefly (delicious), and now they're in my freezer. Come to think of it, I should try thawing them out and eating them on sandwiches with fresh mozz. Good idea!

I just got some at Wegmans the other day. I think that's what they were called. They are a little more expensive, but since I'm only eating one -- I splurge. :)

This is my all-time fave as well but I add a little balsamic vinegar! YUM!
