Happy Friday! I'm Sarah . . . and this is my dog Cooper. The main theme of my blog (Ladybird: Inspiration and Experimentation) is inspiration and experimentation. I post my budget-friendly recipes that I try out, not all vegetarian (sorry! my boyfriend is a veggie, so I'm working on meat-less meals), as well as what inspires my style.
I originally started my blog because after graduation from college (May 08) all of my friends moved in all different directions, and this was a great way to keep up with what everyone was doing in case we got a little to busy to call/email everyone. Since I'm kind of a foodie, and have always loved DIY projects, it evolved into the blog it is today. My style is also starting to take shape, so I also started to post these inspirations.
I'll be moving to New Orleans for medical school in the summer, and I can't wait to see what the city holds for me -- and will keep my blog updated with my adventures down there!
EASY AND HEALTHY TACOS
(click here to read the recipe on Sarah's Blog)
All you need . . .
- Frozen pre-cut onions + peppers (perfect for single living!)
- 1 egg
- 1 taco (or more like 1.5 if you're really hungry, which I usually am)
- Frozen Roasted Corn (from Trader Joe's. divine.)
Thanks to Sarah for sharing with us such a protein-packed recipe for our READER SPOTLIGHT! And if you'd like to be featured, just check out our info post with all the gooey details about the spotlight, as well as guest posting opportunities. And keep an eye out for Alison's Herbivore vs. Carnivore: What to do when your house is divided? -- which will be featured in next Friday's post.
