The High Maintenance Melt


Summer is surely in full swing. And we did a lot this weekend as a result. For Father's Day, we trekked to my hometown for the Pennsylvania State Laurel Festival. It's an annual event that features a 10K race, parade, carnival, and arts & crafts show. So, it's a lot of fun. It's a yearly excuse to get together with family and friends.

Here are just some of the highlights:


Not sure why I'm waving my arms and smiling with my mouth wide open in most of these shots. However, you can gather it was a fun weekend -- most definitely. Back to the 10K for a minute. Get this: Stephen WON the 10K. It wasn't the largest field in the world (maybe 100 runners or so), but with the elevation and a finish time of 36:59 -- we're all super proud of him. I scored second place in my age group, too (50:15 -- again, this course is HARD, so no PRs here!) . . .



Did I mention it was like 80 degrees and brutally sunny the entire time? I wore my Camelbak for extra support, and I'm so glad I did.



I even made a little time for some yoga with my wonderful friend Erin.


And, of course, we can't forget Father's Day. Here are a few shots of me and my dad (who was very kind to pose for me):




But enough about me. So, what's this High Maintenance Melt? It's a copycat sandwich from my favorite hometown cafe: The Native Bagel. Sandwiches are the best -- and when you put them on a bagel (remember the apple melt???), they get even better. Add cheese? Woah.


HIGH MAINTENANCE MELT

What you'll need . . .
  • A bagel of your choice, toasted
  • Light cream cheese or 2 Laughing Cow cheese wedges
  • 2 slices of deli cheese (I used pepper-jack, but cheddar is also good)
  • 1 vine tomato, sliced
  • Handful of baby spinach, divided
  • Brown mustard to taste

Method . . .
  1. Turn your oven on to the broil option.
  2. Once your bagel is toasted, let it cool slightly . . . then spread on a thin layer of cream cheese (or use those Laughing Cow wedges -- I love those).
  3. Pile on a healthy layer a spinach, then tomato, then top with your slice of cheese.
  4. Put under the broiler until lightly browned and bubbly. Squirt on some mustard for extra taste.
So, if THIS is being high maintenance, count me in. I won't apologize -- because it's easy and amazing. I know we've discussed weather here before and I don't want to turn this into a "My weather is worse than yours," but dude, my weather is way worse than yours! :) It's, like, 100 degrees and ridiculously humid. I think my body's finally able to start running again (health issues), but I don't know if summer is the time to start. LOL In any event, looks like you had an awesome time and congrats to you both!

Congrats! Both of your times are pretty darn impressive. I wish I could run that fast!

Sunshine. It's definitely relative. I can't seem to remember where you live, but we're totally not used to the heat. At all. :) Anyway, sorry to hear the heat is that awful! Yuck-o! Feel better.

Laure -- Thanks! Just keep at some speed work -- you'll be amazed what wonders it can do. I hate speed work, so I just like to race frequently. <3

My roommate in college and I would make melty bagel or bread open-face sandwiches like this all the time. We'd call it our Delicious Open-face Sandwich Thing or DOST. :)

P.S. I've been having delicious breakfast smoothies with spinach almost every day the past couple weeks. Sure, I was a little hesitant to throw in that spinach and it took a couple days to balance out the spinach vs. frozen raspberries to make it a pretty pink instead of an unappealing brown color, but either way they are super tasty and nutritious. My blender is pleased I've taken it out of the cupboard after many months of hibernation!

Okay, I'm a big fan of a few things....good mustard, good cheese, good tomatoes and certainly a bagel. So this would probably be one of my most favorite things EVER.

Yay. I was just sitting here feeling listless and uninspired and considering eating cold left over sesame peanut noodles for lunch when I saw this post.

Super easy and super yummy. I used chipotle cream cheese, spinach, tomato, a few scallions, and some Colby Jack cheese. It was awesome!

WOW! Congrats Ashley and Stephen. That's just so awesome! And in heat too! I didn't think it possible, but I am even more impressed with your running talent. You'd be proud of me too... I ran in really hot weather too... only 3 miles and very very slowly, but I didn't die or even get a headache!! Make way at the front of the race, elite runners, here I come.
